1) Sifted dry ingredients of 2 cups of sugar,3/4 cup of chocolate cocoa,1&1/2 teas.baking powder 1&1/2teas baking soda,1 teas salt.
2)in a separate bowl I whisked 2 eggs 1 cup of milk 1/2 cup vegetable oil 2 teas vanilla. Pour liquid in to sifted ingredients and mix well.
3) Now stir in 1 cup of very hot water...............sounds crazy Your batter will now be VERY thin but, don't worry it's all good.
Fill 24 lined cupcake tins 2/3 full. This is more of a pour thing. I make lots of muffins so .......batter is not quite the same texture
As you can see I was off on the 2/3 ...............I guess I was closer to 4/5th. Not to worry Cupcakes didn't stick to the pan and I was able to trim excess away and save it for another recipe

Okay, I get drawn to chocolate like an ant to honey. Love it, love it! I bought a bunch of cupcake liners before Easter - here is another reason to use them. Thanks!
