Ask and you shall receive

just last week I was complaining about hamburger buns and how I needed a recipe.Well I had no sooner published that post when the answer landed on my computer.One of the blogs I follow here is a genius when it comes to finding purpose to things in ways you might not think. Well on Sundays she has started a giving back day and last Sunday she introduced me to Robin. Guess what she makes down in Georgia. That's right homemade burger rolls and they're soft just like I wanted. Isn't that great!!!

S,I put Vicky(my unbelievable Viking mixer) to work on my latest attempt in the fine art of baking. Robin's instructions were very easy.
Line up you ingredients:
3/4cup hot water
2 tablespoons oil
2 tablespoons sugar
2 teaspoon yeast
1 teaspoon salt
1 egg
1 teaspoon onion powder
2 3/4 -3 cups flour
Set aside 1/2 of your flour and put everything else in your mixing bowl. Beat till smooth adding flour as you mix till dough is tacky but not sticky. It took all 3 cups for me. Keep kneading with mixer for 5 minutes.

Let your dough rest for a few minutes. I stayed away for about 15 minutes,that's was my interpretation of a few minutes.It seemed to be fine. Divide in 8 parts. I should have cut my dough in squares trying to form a triangle into a ball was the hardest part of the recipe. Place rolled balls on a greased cookie sheet flatten slightly allow to double. This took about 20 minutes in my area.Depending on time of year and temperature this could vary.Bake in a preheated oven set at 350 degrees for 15 -18 minutes.


I had no onion powder and couldn't wait to try these so I sauteed onions and sprinkled on 1/2 of the rolls. Both were yummy. I plan on making these again so that the rest of the family can get a taste. Um that's how good they are............................said the hobbit

Is it too hot to knit?

Are you still knitting? I know, now that summer is here, you probable are knee deep in strawberry jam or sitting by a lake enjoying a good book.
Well,I plan on doing that too however,I need to get going on my Christmas list.I have so many gifts to make and so little time.
This pattern has become my go to for socks. It has a Celtic knot going up the front and a seed stitch wrapping around your leg that gives a snug but comfortable fit.

The pattern calls for 4 repeats on the knot,but,I like my socks knee high in the winter so I do 6 repeats and make a longer cuff. I use fingering weight yarn so the socks fit comfortably in your shoes.
Since I'm ahead of schedule on the socks perhaps I should do a giveaway?Would you like to have a pair for your Christmas stash? In my little kitchen

Although I have a large house ,my kitchen barely has room for one person.(Thank goodness the Hobbit isn't being filmed in her journey to self sustainment.) If I have someone in the kitchen talking to me,they better be ready to do-si-do out of the room if I have to open the fridge or check something in the oven. Over the years we have adjusted pretty well to this dance
and somehow we still manage to eat three squares a day.I guess it's all in what you love to do.I was blessed with a farm upbringing and the older I get the more connected to the past I want to be .Crazy isn't it?This year I decided I would make all our bread.I know some of you have been doing this already but,raising four children who needed to be carted wherever they had to go made domestic duties fall to the rear. Enough excuses, I have made a commitment I intend to keep it up. It's been 4 months and I think a routine has been established.Now that summer is here I find that some days are already getting too hot to bake. I should bake bigger batches but,I'm addicted to fresh from the oven.I have to laugh because if I freeze half the loaf we run out.If I leave the whole loaf out I think it will go bad before we finish it.One problem that my mother and grandmother didn't have was hamburger buns and finger rolls.They made one kind of bread and that's what you ate unless it was a holiday.Only then did they stress themselves out with over the top recipes. However times have changed and I can't imagine giving my family a hot dog or burger wrapped in a slice of bread. So,I'm currently looking for a bread recipe I could use for finger rolls and burger buns .I tried changing the shape of my regular white and wheat bread,the family was tolerant but I knew they seem to be too dense I want something lighter,fluffier.If anyone out there has had this problem let me know how you resolved it.Found a secret recipe? Let them adjust to the thicker rolls? I'd love to hear your input.
Another favorite of my people is what I call Kermie's pasta.If you're growing basil and baby spinach you pretty much have all you need to keep this filling and tasty salad on hand.Just make your favorite pesto and add an additional 2-3 handfuls of baby spinach to the blender or Cuisinart. I have very few people turn away from this one. I make this at the barn and it always sells out.
Well I'm glad to be back and it looks like I'm winning the battle however, I hope we don't have to go through this again any time soon.

The Hobbit makes it back!!!

It's been a rough trip but we are finally getting the gist of a new computer.

I'm so exhausted from the ordeal that I can hardly keep my eyes open.
I think I need to take a much deserved nap while Hobbit catches up to her reader. She's still a little slow with the photo upload so we have to be patient with her..........

It's Friday,I'm happy

Well not all of us are happy.Ok ,It's been a crazy week.Hobbit got a new laptop and she can't find her pictures.I'm just going to take a nap and maybe things will be better next week.Just keep smiling,that's my advice.
